I start with a little butter and let it melt with a couple of garlic cloves. I wash the beet greens and throw them wet in the butter. I let it simmer with a lid on it for about 5 minutes.
I used my mandolin and made Juliennes with the raw beet and put a little balsamic vinegar on them. Here they are on a plate.
